8 Soup Recipes You Will Make Again and Again

Oh, October. You naughty minx. You tease me with a peek at the glorious colors of autumn and a welcome blast of cool night air.

So my thoughts turn, naturally, to a bowl of glorious, soul-warming soup. Sorry, gazpacho, you are SO August. Ta-ta, vichyssoise. You simply will not do. Here are some of my favorite soups, the ones I simply cannot do without, as the days get shorter and the temperature drops. Come at me, winter.

Yes, I realize that I am obsessed with this blog, but it’s a HEALTHY obsession. Deb Perelman’s recipes just hit the sweet spot of craveability and ease. This Broccoli Cheddar soup is no exception: It’s crazy delicious, filled with cheddary goodness and enough broccoli that you can feel good about yourself. Molly Yeh is a recent find for me, but she’s been blogging as My Name is Yeh for a few years, and has a new cookbook out (“Molly on the Range”). She’s a Juilliard-trained musician from Chicago who moved to a farm in Northern Minnesota, and her recipes reflect her heartland sensibilities combined with her Chinese and Jewish heritage. Her Bacon & Egg Drop Soup uses a broth redolent with ginger, garlic, scallions, soy sauce and turkey bacon (although you can sub in the real thing) into which beaten eggs are whisked. Breakfast? Creamy Wild Rice and Mushroom Soup

Oh, my, this soup is like a warm hug. Plenty of chopped veggies — mushrooms, celery, carrots, shallots — plus herbs, wild rice and vegetable stock are simmered, thickened with flour and made rich with the addition of sour cream. Find the recipe at Oh My Veggies.

Winter Squash Soup With Curry and Coconut Milk

Just made a pot of this, a perennial favorite in my house. I love the depth of flavor, a little sweet, a little spicy, and a lot of yum. The squeeze of lime at the end gives it a bright finish. Tomato Lentil Soup

I do appreciate a tasty lentil soup, and this tomato and lentil mash-up fits the bill, its sweet notes coming from the sautéed onions and carrots, with a little bit of spicy mystery courtesy of coriander and cumin. You’ll make this one again and again. Find the recipe at Sweet Amandine.

Kale, White Bean and Chicken Soup

Hearty beans, vitamin-filled kale and tender chunks of chicken combine to make a filling, tasty, and — dare I say? — healthy soup that even picky eaters might be willing to eat. New England Clam Chowder

Although he now (famously) lives in Paris, David Lebovitz grew up on the East Coast and eternally hankers for Clam Chowder, which he first discovered on family visits to the late-lamented Howard Johnson’s (I was a devotee of their fried clams myself).
