New in Town: The Simple Greek in Highland Park

There’s a new fast-casual restaurant in town: The Simple Greek is open in Highland Park. Marcus Lemonis, host of CNBC’s “The Profit,” is a partner in the restaurant, a franchise out of Philadelphia that he first worked with on his show. The Simple Greek emulates the much-admired Chipotle model of an open food assembly line, where customers can choose their favorite ingredients and watch their meals being made in front of them. Start with a base of white or whole-wheat pita bread, rice or salad, and then add protein (gyro meat, grilled chicken or steak, pork souvlaki or lentils) and toppings (feta cheese, tomatoes, cucumbers, onions, tzatziki sauce, etc.). Supplement with spanakopita (spinach pie), fresh-cut Greek fries and some baklava, and you’re on your way. Simple and delicious.

“Coming from a Greek family, I am particularly excited to bring this dining experience to the community of Highland Park,“ says Lemonis,” and give our customers reasonable prices and convenient access to great food.” Consider The Simple Greek for your next post-soccer practice or pre-piano lesson run!
