Pumpkin Chocolate Chip Cookies

“These have been my family’s favorite for years. They are easy to make, even young children can assist with measuring or adding ingredients. I often let my kids ‘sneak’ one for breakfast because you can feel pretty good about a recipe that has a whole cup of pumpkin in it!” -Amy

  • 1/2 cup butter at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 cup pumpkin (half of a 16 oz. can)
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Directions

1. Pre-heat oven to 350 degrees.

2. In two separate bowls, mix the wet and dry ingredients.

3. Slowly add the dry to the wet. Add the chocolate chips.

4. Drop by spoonfuls onto ungreased cookie sheet and bake for 15-17 minutes.

5. Cookies should rise and look cooked, but they won’t be completely browned. The consistency is more like a spongy cake than a cookie.
