Blackbird at 20 Dinner Series Featuring Renowned New York Chef Wylie Dufresne

In honor of the 20th anniversary of Blackbird, the landmark West Loop restaurant, Executive Chef-Partner Paul Kahan and current Chef de Cuisine Ryan Pfeiffer are inviting some of the best chefs in the country to collaborate on an exclusive dinner series titled “Blackbird at 20.” For the fifth installment of the series, Paul is inviting old friend and James Beard award-winning Chef Wylie Dufresne (71 Clinton Fresh Food, wd~50, Alder, Du’s Donuts and Coffee) for a multi-course dinner. First meeting on a culinary research expedition to Spain, Paul credits Wylie as being one of the most important modern chefs in the world and responsible for one of the best dishes of his life, tortellini with lamb consommé and shiso, which will be served at the event.
