It’s the perfect dessert to bring to your next gathering, or simply enjoy with your family. Either way, fans of chocolate need to keep this recipe on hand as summer turns to fall.
Flourless Chocolate Cake
Sponge Cake Layer:
- 8 egg whites
- 18 ounces chocolate
- 15 egg yolks
- 7-1/2 ounces butter
- 3-1/2 ounces sugar
Ganache:
- 1 ounce heavy cream
- 32 ounces dark chocolate
- 16 ounces milk chocolate
Directions:
1. Melt chocolate and butter together and add to the egg yolks.
2. Whip the sugar and egg whites together until they have soft peaks. Fold the egg whites into the egg yolk mixture.
3. Pour into two 8-inch round pans and bake at 350 degrees in a bain-marie (with steam) for 25-30 minutes. Cool in the pan. (Cakes should fall slightly.) Remove when cool.
4. For ganache, mix both chocolates together. Boil the heavy whipping cream, pour over chocolate and mix with a spatula until smooth. (Do not use whisk as this creates bubbles.) Pour over cooled cake. Enjoy!
