10-Minute Recipe: Grilled Peach and Purple Onion Salad

Let’s face it: Summer may be coming to a close sooner than we’d like.

From cramming in final family vacations to dreaded back-to-school shopping, August often ends in the blink of an eye. Both my sister Courtney and I think this might be a good time to press pause, slow it down and soak up those last rays of sun before falling into our autumn routines.

We recommend heading to your local farmer’s market and picking up some peaches, herbs and a purple onion for a delicious and super simple salad from Court’s food blog, A Life From Scratch! We promise this side dish will leave you feeling satisfied, nourished and maybe even relaxed. Make it even easier by whipping up the vinaigrette earlier in the day and chilling in the fridge. And be sure to save what you don’t use for salads later in the week—it’s far too good to toss.

Whether you are throwing dinner on the table for whoever’s there or leisurely preparing dinner for a final summer get-together, don’t forget this healthy and oh-so-delicious salad that can jazz up any home-cooked meal in under 10 minutes!

Grilled Peach and Purple Onion Salad
Served 4

  • 1 bag mixed greens
  • 2 peaches, halved, and sliced into large chunks
  • 1 purple onion, peeled, and sliced into large chunks
  • handful of freshly crumbled goat cheese

Vinaigrette:

  • 1 heaping tablespoon of dijon mustard
  • 4 tablespoons of red wine vinegar
  • 1 teaspoon of good honey
  • 1 lemon, juiced
  • 1/2 teaspoon of kosher salt
  • 1/2 teaspoon of pepper
  • Chopped up fresh herbs, such as basil, parsley, chives or thyme
  • 1/2 cup of good olive oil

Directions: 

1. Heat grill to medium heat.

2. Brush the peaches and purple onions lightly with olive oil and grill roughly 3 minutes per side (just until nice char marks appear on both sides).

3. Meanwhile, whisk dressing ingredients together and drizzle in olive oil slowly. Pour over the peaches, onions, goat cheese, greens and toss together.
