Healthy Breakfast Cookies

What does your family like to eat for breakfast?

Almost every morning I struggle to find a healthy breakfast that my kids will actually eat. My son wants chocolate-chip pancakes every day, and my daughter wants a bagel and cream cheese.

One morning, my daughter saw a banana sitting on the counter and came up with a brilliant idea: banana cookies. I combined healthy breakfast elements—eggs, yogurt, oats and peanut butter—all into one tasty breakfast cookie that was a huge hit.

My daughter helped measure and pour ingredients and stirred and taste-tested the batter—and she approved! A healthy breakfast is served.

Healthy Breakfast Cookies
Makes about 16 cookies

  • 3 egg whites
  • 2 cups old-fashioned oats
  • 1 ripe banana
  • 1/2 cup vanilla Greek yogurt
  • 1 tablespoon brown sugar
  • 3 tablespoons natural peanut butter
  • 4 tablespoons chocolate chips

Directions:

1. Preheat oven to 350 degrees.

2. In a medium mixing bowl, combine all ingredients until smooth.

3. Scoop batter and flatten (they will not spread out during baking) onto a greased cookie sheet. Bake for 25-30 minutes, or until golden brown in color.
