Forget tomatoes! Mangos will soon be in season and they make a delicious salsa.
- 2 ripe mangoes, peeled, pitted, and diced
- 1 red pepper, diced
- 1/2 red onion, chopped
- 3 tablespoons fresh cilantro leaves, chopped
- 3 tablespoons fresh lime juice
- Dash of cayenne pepper (optional)
Combine all ingredients. Cover and refrigerate for at least one hour.
