Sweet Italian Sausages with Hash Browns

My friend Mimi Rodman suggested this recipe. It turns Italian sausages into a meal and, best of all, only dirties one pan. The hash browns were a huge hit and totally easy to make.

Sweet Italian Sausages with Hash Browns

Serves: 4
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients

4 Italian sausages
1 tablespoon canola oil
1-1/2 pounds Yukon gold potatoes or 20 ounce bag pre-shredded hash browns
1 small onion
2 tablespoons butter
2 tablespoons parsley, chopped
1 pint cherry tomatoes

Directions

1. While the sausages cook, shred the potatoes and onion. The fastest way is to use the grating disc on your food processor and feed the potatoes and onion through the shoot. Peel the onion, but no need to peel the thin-skinned potatoes. If you don’t have a food processor, consider buying pre-shredded potatoes.

2. Take the sausages out of the pan, and add the butter, potatoes and onion. Salt and pepper the potatoes. Let the potatoes brown, then flip (or chunk and flip). It’ll take about 15 minutes for the potatoes to cook through and form a yummy browned crust.

3. Cook the Italian sausages in a non-stick frying pan with the oil until browned and cooked through. Use medium heat, and cover the pan. Give it a shake every few minutes.

4. Once the potatoes are cooked, remove them to the serving platter and throw the sausages (and any accumulated juices), the cherry tomatoes and parsley back in the frying pan. When the tomatoes and sausages are warmed through, serve with the hash browns.

Complete the menu: All this needs is a green salad to finish the meal and some homemade ice cream for dessert.
