I’m the in-house gluten-free expert at Make It Better, so when this product sample came, I was the natural guinea pig.
I tested the Gluten-Free Cocoa Teff Pancake & Waffle Mix ($9 for 226 grams, which makes about 14 pancakes) by Zemas Madhouse Foods.
Better:
- Pancakes had a delightful consistency and texture (not runny) which is hard to find among gluten-free products
- Easy to prepare, easy to bake
- Cocoa flavor is sweet but not overbearing (I decided to forgo syrup and just added butter since they were already sweet; they were still delicious that way)
- There are several alternate recipes available online if you don’t feel like pancakes
I will definitely try more products (I am especially looking forward to the Gluten-Free Cinnamon-Oatmeal Apple Muffin Mix and the Gluten-Free Rosemary-Millet Focaccia & Pizza Crust)
Bust:
My only complaint is that some of the recipes call for hard-to-find or uncommon ingredients like coconut palm sugar or quinoa flakes. If you’re gluten-free, this isn’t a new concept. To my delight, the pancake ingredient list was short and I found everything I needed at my local grocery store.
