Cinnamon-Chocolate Chip Coffee Cake

This is a sweet start to a weekend morning, and this recipe is kid-friendly. Younger ones will need help with the oven, but older kids should be able to make this by themselves.

 

Serves 12

  • 1- 1/4 cups plain yogurt
  • 1 -1/4 teaspoons baking soda, sifted
  • 1/2 cup unsalted butter, room temperature
  • 1 -1/4 cups sugar
  • 2 eggs, beaten
  • 1 – 3/4 cups flour
  • 1 – 3/4 teaspoons baking powder

Topping:

  • 2/3 cup chocolate chips
  • 1/2 cup chopped nuts
  • 1 teaspoon cinnamon
  • 1/3 cup brown sugar

Preheat oven to 350F. Butter or spray a 9” x 13” baking dish or pan and set aside. In large bowl, mix together yogurt and baking soda. Set aside. In separate bowl, cream together butter, sugar, and eggs until fluffy.

Sift flour and baking powder onto a piece of waxed paper. Add to butter mixture and blend. Quickly stir in yogurt mixture. Pour batter into prepared pan. Sprinkle chocolate chips evenly over the surface and press lightly into batter. Combine topping ingredients and sprinkle evenly over surface. Bake for 40-45 minutes, until top is golden brown and cake tests done with a toothpick.
