Seared Salmon with Soy Honey Lime Sauce

- 1/2 cup mirin
- 1 tablespoon finely grated fresh ginger
- 1/4 cup rice vinegar
- 4 tablespoons soy sauce
- 1 1/2 pounds salmon fillet
- 1/4 cup honey
- 1 tablespoon fresh lime juice
1. Combine mirin, ginger, vinegar and 2 tablespoons of the soy sauce. Add the salmon and marinate for 15 minutes at room temperature.
2. Meanwhile, in a small saucepan, combine the remaining 2 tablespoons of soy sauce with the honey and lime juice and bring to a boil. Stir frequently until it thickens, about 4 minutes.
3. Preheat the broiler. When it’s hot, put the salmon in, skin side down. After about 5 minutes, flip. Depending on how you like your salmon, broil for another 3 to 5 minutes. After 8 minutes, the thickest part will be a little rare in the center and the thinner ends will be quite well-done.
4. Drizzle the soy-honey-lime glaze over the fish and serve.
