If you’re like me and the day got away from you, it’s a pizza pie and a quick salad that I threw together.
But don’t forget a great drink! I give you Sunshine in a (Martini) Glass. Just three simple ingredients, and happiness occurs.
Inspired by a recent luncheon for author Amy Stewart and her book “The Drunken Botanist” (which is fascinating and you should immediately purchase it), I ran home and combined fresh grapefruit juice (Trader Joe’s or Whole Foods “fresh-squeezed” will do in a pinch), my favorite gin (FEW Spirits of Evanston, natch) and the ever-delicious Lillet Blanc. Let the sun shine.
Sunshine in a Glass
Serves 2
- 2 ounces gin
- 2 ounces Lillet Blanc
- 3 ounces fresh grapefruit juice (preferably pink)
Combine ingredients in a large shaker with ice. Shake and strain into two ice-cold martini glasses. Garnish each glass with a wheel of pink grapefruit. Imbibe and enjoy.
