Somewhere along the line, a very boring person decided that it is In Poor Taste to drink rosé after Labor Day. As far as we’re concerned, Indian summer is the perfect time to sip something crisp before the cold weather hits and it’s red wine all the way. Take advantage of late summer produce and mix a bold rosé with ripe, juicy blackberries and refreshing grapefruit to make a popsicle that’s just for adults. It does take a long time for these to freeze, and the texture is a little more granita than Fudgesicle, but the wait is worth it. Fifteen minutes of active cooking time to a visually stunning popsicle with a kick – where do we sign up?
Rosé Popsicles
Ingredients:
- 1 1/2 cups rosé wine (try Baker Lane)
- 1/8 cup sugar
- 1/2 cup fresh-squeezed grapefruit juice
- 1 cup blackberries
Directions:
1. In a small saucepan, combine the blackberries, sugar and grapefruit juice. Simmer over low heat until the blackberries are broken down. Mash with a potato masher to fully integrate the berries.
2. Combine the blackberry mixture with the rosé and mix well to combine. Pour into popsicle molds or paper cups. Freeze at least 8 hours or overnight, adding sticks once partially set. Unmold by wrapping a hot towel around the popsicle mold and eat immediately.
