We eat these sweet potato “fries” at least once a week in our house because they are delicious, good for you and cost just pennies to make.
This recipe serves my family of 5 without one fry left over. If you have fewer teenagers in your house, it will easily serve 6.
Total time: 30 minutes
- 3 large sweet potatoes (about 2 pounds)
- ¼ cup olive oil
- ½ teaspoon kosher salt
- 1 teaspoon fresh thyme leaves
Preheat oven to 425º. Peel and slice sweet potatoes into wedges. Toss with olive oil, salt and thyme. Bake on a cookie sheet for about 20 minutes, turning once. Fries should be browned and fork tender.
Cook’s Note: Instead of the salt and thyme, these are also delicious with about 1 teaspoon of BBQ spice rub (whatever brand you have handy) sprinkled on them.
