Convito’s Summer Risotto

This dish represents some of the best colors and flavors of summer from your local farmers’ market.

 

Delicious as a first course with a glass of Sauvignon Blanc, or as the main event with some great crusty bread.

Convito’s Summer Risotto
Serves 6

Garnish

  • 1/4 cup yellow grape tomatoes, diced
  • 1/4 cup red grape tomatoes, diced
  • 1 teaspoon parsley, finely chopped
  • 1 tablespoon lemon zest
  • 1 1/2 tablespoon extra-virgin olive oil

Risotto

  • 5 cups chicken broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons shallots, finely chopped
  • 1 1/2 cups Arborio or Carnaroli rice
  • 1/2 cup dry white wine
  • 3/4 cup baby zucchini, diced (1/4-inch dice)
  • 3/4 cup fresh corn (brushed with olive oil, grilled for approximately 3 minutes, then cut off the cob)
  • 1/3 cup grated Parmesan cheese

Directions:

1. Make the garnish with the tomatoes, parsley, lemon zest and olive oil. Set aside.

2. In a saucepan, bring the chicken broth to a steady simmer.

3. Melt the butter with the olive oil in a heavy-bottomed skillet over low heat. Add the shallots and sauté over medium heat until soft, approximately 2 minutes. Add the rice and stir until well coated. Add the wine and stir until absorbed.

4. Begin adding the simmering broth to the skillet, 1/2 cup at a time. Continue to stir, always making certain the rice is not sticking to the bottom of the pan. Make sure not to add too much broth at a time. This process should be done over medium heat (approximate cook time is 30 minutes). About 25 minutes into the process, add the zucchini, and stir into the rice. Continue adding broth. Next add the grilled corn and stir into the rice. Continue cooking. The rice is done when it is firm, but tender. If you run out of broth, use hot water.

5. When you estimate that the dish is a few minutes away from being done and the rice and vegetables are al dente, turn off the heat. Add Parmesan cheese, stirring it into the rice. Add salt and pepper to taste. Drizzle with the garnish and serve immediately.
